Beef With Broccoli Recipe
Ingredients
* 1/2 lb broccoli (other vegetables may be substituted)
* 15 oz of beef, cut length wise. (chicken or pork may be substituted)
* 1/3 cup of cooking oil
* 2 Green onions to garnish (chopped)
Marinade
* 1 egg white
* 1 tablespoon cornstarch
* 1 clove of garlic, minced
* 1-1/2 tablespoon soy sauce
* 1/2 tsp salt
* 1 tablespoon dry sherry (wine or beer may be substituted)
Sauce
* 1/4 cup of oyster sauce
* 1 tbsp seasme seed oil
* 1 to 1 1/2 tbsp soy sauce
* 1 tbsp dry sherry
* pinch of sugar
Corn starch solution
* 1 tablespoon cornstarch mixed with 3 tablespoons cold water
Directions
1. Marinate the meat in egg white, cornstarch, soy sauce, salt, garlic and Sherry; set aside for 10 minutes.
2. Blanch the broccoli 3 minutes in boiling water, set aside.
3. Heat 1/4 cup of oil in a wok or pan and stir fry the beef, about 25 seconds, no longer!
4. Remove the beef and drain the wok. Heat 3 tablespoons of fresh oil and stir fry the broccoli about 1 minute.
5. Combine all sauce ingredients in a cup, mix well.
6. Return beef to the wok. Add the sauce. Stir fry 1 minute to cover beef and broccoli in the sauce.
7. Mix cornstarch solution. Add to wok and stir fry until sauce thickens, about 1-2 minutes.
Garnish with chopped green onions and serve hot.
