Chicken Stir Fry Recipe


Ingredients
* 6 oz chicken breast cut into strips
* 3 tablespoons Olive Oil
* 1 cup red or green bell pepper (cut into strips or chunks)
* 1 cup carrots (sliced lengthwise in 3 inch long strips)
* 1/4 cup Lemon-herb Stir-fry Sauce
* 3 cups cooked rice

Directions
1. Heat oil in large skillet on medium heat.
2. Add chicken strips and cook until cooked through. Remove chicken and set aside.
3. Add additional oil to pan, if needed, to provide about 2 tablespoons oil left in pan.
4. Heat oil, then add vegetables and cook on medium heat for about 5 min or until vegetables are crisp tender.
5. Return the chicken to the pan and add the Lemon-herb sauce, mix well, cover and simmer about 2 minutes or until heated thoroughly, stirring occasionally.
Spoon over cooked rice and serve hot.
