Foil Wrapped Chicken Recipe
Foil Wrapped Chicken is generally served as an appetizer.
Ingredients* 1 oz. fresh ginger
* 2 tbsp soy sauce
* 1 tbsp sherry (wine or beer may be substituted)
* pinch of brown sugar
* pinch of salt
* pinch of black pepper
* 1 lb. chicken meat
* 2 scallions (green onions)
* oil for frying (peanut oil recommended but you use what you have)
Directions
1. Chop the scallions very finely; chop the ginger finely and mix with the scallions, soy sauce, sherry, sugar, salt and pepper.
2. Cut the chicken into bite size pieces and toss into the soy sauce mixture. Leave covered to marinate for at least 30 minutes.
3. Cut out squares of aluminum foil (3 or 4 inches square). Wrap each piece of chicken into a piece of foil, being sure to add a little extra sauce mixture in with the chicken pieces. Make sure chicken is securely wrapped with no leaks.
4. Drop the foil parcels in hot oil and fry for about 2 minutes turning once. Drain.
5. Serve the chicken in the wrapper. The wrapper holds in the flavor and juices.
