Chinese Fortune Cookies Recipe


Ingredients
* 5 Egg whites
* 1-1/2 cups Sugar
* 1/4 teaspoon Salt
* 1 cup Unsalted butter (melted and cooled)
* 1 cup Flour
* 1/2 teaspoon Almond extract
* 5 dozen Paper Fortune Messages

Directions
1. Pre-heat oven to 375 degrees.
2. Put egg whites in a bowl, add sugar and salt and stir until the sugar has dissolved and the mixture is thick and shiny.
3. Gradually beat butter into egg white mixture.
4. Next stir in the flour and almond extract.
5. Using a measuring spoon, drop by teaspoonfuls, well apart, onto a greased or non-stick baking sheet.
6. Bake only 1 sheet at a time for 7-8 minutes, or until the edges are lightly browned.
7. Working quickly, place a message in the center of each cookie, and fold in half while still warm.
8. Shape the cookies by hand. Cool completely before storing.
Makes about 60 cookies.

Note: To shape the cookies, simply place the message in center of the cookie, fold cookie over in half, then bend the two ends up to give a boat shape.
