Chinese Mixed Vegetables Recipe
This is a basic veggie recipe. You may add any additional vegetables you want. Some suggestions: thinly sliced carrots, chopped onions, water chestnuts, broccoli, bell pepper. Just be sure to cook the dense vegetables, like carrots, first. Do not over-cook. Chinese vegetables should be served tender-crisp.
Ingredients* 1 tsp vegetable oil
* 1 thinly sliced ginger root
* 1 clove crushed garlic
* 2 cups Chinese cabbage (chopped)
* 1 tsp salt
* 1/2 tsp sugar
* 1/4 cup canned chicken broth
* 1/2 cup pea pods
* 1/2 cup sliced bamboo shoots
* 1/2 cup thinly sliced mushrooms
Directions
1. Preheat wok and spread the vegetable oil around inside. Rub bottom and sides with the ginger root and garlic, then discard.
2. Put cabbage in wok and stir. Add salt, sugar, and chicken broth. Stir and cover; cook for 3 min.
3. Add the peas pods, bamboo shoots and mushrooms. Cook another 30 seconds while stirring.
Serve hot.
