Shrimp With Snowpeas Recipe
Ingredients
* 1/4 lb Fresh or frozen medium- Sized shrimp
* 2 Green onions
* 3 tbsp Peanut oil
* 1/3 lb Fresh snowpeas
* 1/2 cup Chicken stock
* 8 large Fresh or canned water Chestnuts
* 2 tsp light soy Sauce
* 1 tsp Dry sherry
* 1/2 cup Unpeeled straw mushrooms
* 1/2 tsp Salt
* 2 tsp Fresh ginger, slivered
* 1 pinch Sugar
* 1 large Clove Garlic, minced
* Cornstarch paste
Directions
1. Soak snowpeas in cold water for 2 hours to make crisp.
2. Soak shrimp in salted cold water for 1 hour.
3. Drain straw mushrooms.
4. Break off ends of snowpeas.
5. Peel and rinse water chestnuts.
6. Shell shrimp, keeping tail intact. Deeply slit shrimp around upper curve (don't cut through), deveining, and spreading shrimp almost flat.
7. Cut green onions in 2" lengths.
8. Slice water chestnuts thinly crosswise.
9. In a small bowl, mix chicken stock, soy Sauce, sherry, salt and Sugar.
10. Swirl peanut oil into very Hot wok. When oil begins to smoke, add shrimp and stir-fry until they curl (about 20 seconds)
11. Remove shrimp to serving platter.
12. Stir-fry mushrooms for 30 seconds; add Garlic and ginger; stir-fry another 30 seconds. Add snowpeas and water chestnuts; stir-fry briskly for 1 minute.
13. Add chicken stock (from step 9)to wok; bring to a boil; keep stir frying until snowpeas are bright green.
14. Push ingredients out of liquid to side of wok, dribble in cornstarch paste to thicken liquid slightly.
15. Return shrimp to wok and push all ingredients back to center of wok. Stir briefly about 20 seconds.
Serve immediately. Note: snowpeas should be slightly under-cooked when served.
