Won Ton Recipe


Ingredients
* 10 Chinese mushrooms, small
* 1 tsp Salt
* 1/4 lb Prawns
* 1/2 tsp Sugar
* 5 Fresh water chestnuts (OR 7- canned ones)
* 1 tsp Thin soy Sauce
* 1 tsp Oyster Sauce
* 1/2 lb Ground Pork
* Dash of pepper
* 1 Green onion, finely chopped
* 1/4 tbsp Cornstarch
* 1 small Egg
* 1 pk Wonton skins (wrappers)

Directions
1. Boil Chinese mushrooms for 10 minutes, rinse, squeeze dry, cut off and discard stems; then, chop into very small pieces.
2. Shell, devein and wash prawns. Chop into very small pieces.
3. Peel and chop water chestnuts into very fine pieces
4. Combine all ingredients, except won ton skins, and mix well.

Assembly
Various methods may be used to assemble the won tons. We will use the simplest.
1 tsp of filling is used for each won ton.
Place a won ton skin on a flat surface. Wet the edge of the wrapper with a wet finger 1/4 inch from the end of the edge all the way around.
Place the teaspoon of filling in the middle of the won ton wrapper, pull up edges of wrapper to enclose the filling and twist to seal. The final result should resemble a drawstring purse.

Cooking
The won tons may be cooked by boiling or frying.

Boiling the won tons: Bring a large pot of water to a boil. Add the won tons, making sure there is enough room for them to move about freely. Let the won tons boil for 5 - 8 minutes, until they rise to the top and the filling is cooked through. Remove from the pot with a slotted spoon.

Deep-frying the won tons: Heat oil to 360 degrees. Add won ton in small batches and fry, turning occasionally, about 2 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
